Creamy Baked Strawberry Cheesecake Recipe

Ingredients
  • 1-1/4 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup butter melted
  • 16 ounces cream cheese softened
  • 14 ounce can sweetened condensed milk
  • 3 eggs
  • 1/4 cup real lemon juice from concentrate
  • 8 ounces sour cream at room temperature
  • 2 cups sliced fresh strawberries

Directions
  1. Preheat oven to 300. Combine crumbs, sugar and butter then press firmly on bottom of 9-inch spring form pan. In large mixer bowl beat cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add eggs and lemon juice and mix well. Pour into prepared pan and bake 55 minutes. Top with sour cream and bake 5 minutes longer. Cool and chill. Just before serving remove side of pan and top with strawberries.

This was great! I added an alteration, only because I didn't have sour cream, and I had an extra pack of Cream Cheese to use up. It was a big hit at our family get together this week-end! Thanks,

Alterations


I omitted the sour cream, and added one pack of cream cheese, 1 egg and a 1/4 cup of icing sugar. I also increased the lemon juice by 2 tbsps to account for the extra cream cheese. I made it in a 9x13 pan because I was making it for a big crowd. I also let it cool in the oven for about an hour after it was done baking. It was so good!
