Best ever Potato Salad

- 10 large potato's shopping list
- 1 cup of diced bacon shopping list
- 1 cup of diced spiced pickles(or any pickles of you choice) shopping list
- 6 boiled eggs shopping list
- 1 cup of mayo shopping list
- 1cup on sour cream shopping list
- Fresh dill shopping list
- Fresh chives shopping list
How to make it
- In a large pot of salted water cook the roughly diced potatos, I leave the skins on but it's up to you. (you can also put the eggs into the same pot to boil them it cuts down on pots and time.)
- Cook off the diced bacon.
- In a large serving bowl add the still hot drained potatos (it's important that the potatos are still hot, it helps the flavours meld together.)
- Add in the cooked bacon, diced pickles and diced hardboiled eggs stir through gently.
- Add 1/4 cup of fresh dill and then the same of chives, the mayo and sour cream stir together.
- (greek yogurt is also a good substitute for the sour cream) can be served warm or chilled.
