How to make it

  • In a large pot of salted water cook the roughly diced potatos, I leave the skins on but it's up to you. (you can also put the eggs into the same pot to boil them it cuts down on pots and time.)
  • Cook off the diced bacon.
  • In a large serving bowl add the still hot drained potatos (it's important that the potatos are still hot, it helps the flavours meld together.)
  • Add in the cooked bacon, diced pickles and diced hardboiled eggs stir through gently.
  • Add 1/4 cup of fresh dill and then the same of chives, the mayo and sour cream stir together.
  • (greek yogurt is also a good substitute for the sour cream) can be served warm or chilled.

    This sounds delicious with the sour cream & pickels but I think I'll use real bacon chips instead. Will let you know how it comes out when I make it this summer!
