How to make it

  • Cook the orzo, cool and set aside.
  • Preheat oven to 325 F
  • Slice the tops off of each tomato and hollow out using a sharp spoon or melon baller.
  • Sweat or saute the onions and garlic, set aside (optional)
  • Chop 1/2 cup of leftover tomato for filling and add to the orzo.
  • Add olive oil, pepper, fresh basil and oregano, (onions and garlic), and feta cheese to the orzo. Hand "mix" gently.
  • Brush a bit of olive oil inside each tomato. Season with salt and pepper and place in the oven for 10 minutes. Invert and drain tomatoes and let sit for 15 minutes.
  • Stuff tomatoes with orzo filling.
  • Warm in oven for 10 minutes (or till feta melts some) Can be served at room temp, but i found it better warm and cheesy.

    This looks great!! I will say however that historically basil and oregano do not play well with each other - except maybe with tomatoes. Good idea to use them fresh.
