This is another traditional Cypriot dessert. They used to sell them at the fairs and were always prepared with loukoumades (another Cypriot sweet like donought).

Ingredients
  • For the Dough
  • 5 glasses of whole wheat flour
  • 1/2 cup of oil
  • A pinch o salt
  • 1 – 1 ½ glasses of lukewarm water (for kneading)
  • For the Cream filling
  • 1 glass of fine semolina
  • 5 glasses of water
  • 1 glass of sugar
  • ½ tablespoon mastic gum ground with 1 tablespoonful of sugar
  • 1 spoonful of anthonero (essence of citrus blossoms) or rodonero (rosewater)
  • Oil for frying such as corn oil or canola etc.
  • Sugar powder for sprinkling

Directions
  1. For the dough
  2. Sieve flour and add oil and rub until absorbed by flour. Add salt and water until we have soft dough. Cover with a napkin and let to rest for 10 minutes. Then shape into small balls and brush with oil and let rest for 30 minutes.
  3. For the filling
  4. Put 5 glasses of water in a sauce pan (not boiling) and add the semolina, the sugar, the ground mastic, the rosewater and stir until cream is ready and thick.
  5. Empty the cream in a glass (pyrex) pan and let it to cool down for 3-4 hours.
  6. Phyllo
  7. Roll the dough into a very thin phyllo (if we do it with the pasta machine, take it up to No. 6).
  8. When it is ready wet it with oil. Cut phyllo into 3 x 3 inch pieces and cut the cream into squares 2 x 2 inches, place in the middle (but in opposite direction) and fold phyllo like an envelope.
  9. Fry in very hot oil.
  10. Sprinkle with powder sugar.
