VERA CRUZ RED SNAPPER I obtained this recipe from an estate sale when I purchased the family collection from the Abbott Estate in Grand Saline, Texas in 1990.

Ingredients
  • 2 pounds red snapper fillets
  • Juice of 1 lime
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 medium white onion chopped
  • 1 bell pepper julienned
  • 1 tablespoon garlic chopped
  • 2 medium tomatoes chopped
  • 1/4 cup green olives sliced
  • 1 tablespoon capers
  • 2 pickled jalapeno peppers

Directions
  1. Preheat oven to 450.
  2. Sprinkle fish with lime juice and salt.
  3. Set aside.
  4. Sauté onion, bell pepper, garlic and tomatoes in oil until softened.
  5. Simmer sauce until most of liquid is evaporated.
  6. Place fish in baking dish then top with sauce, olives, capers and chili peppers.
  7. Cover with foil and bake 15 minutes.
