Horseradish Mashed Potatoes

- 2 1/2 lb baking potatoes, peeled and cut into chunks shopping list
- 1 t kosher salt + more for seasoning shopping list
- 2/3 c canned milk shopping list
- 8 T butter, cut into small pieces shopping list
- 1/4 t white pepper or to taste shopping list
- 2 - 3 t horseradish shopping list
How to make it
- Put the potatoes in a pot filled with enough water to cover them well.
- Add salt.
- Bring the water to a boil over high heat, then reduce the heat to medium and simmer until the potatoes are fork tender, 15 to 20 minutes.
- Drain the potatoes well and return to the pot.
- Add salt, pepper and butter while the potatoes are still hot.
- Mash the potatoes with a potato masher.
- Add the cream.
- Mash the mixture until it is smooth and fluffy, 3 to 5 minutes.
- Beat in the horseradish and adjust seasoning, if needed.
- Transfer the potatoes to a micro-wave safe bowl so you can reheat before serving, if needed.

I am one of the fortune ones who really likes horseradish. Sometimes you need a change with potatoes along with some kick...this does it, nice recipe.
