Horseradish Mashed Potatoes Recipe

Ingredients
  • 2 1/2 lb baking potatoes, peeled and cut into chunks
  • 1 t kosher salt + more for seasoning
  • 2/3 c canned milk
  • 8 T butter, cut into small pieces
  • 1/4 t white pepper or to taste
  • 2 - 3 t horseradish

Directions
  1. Put the potatoes in a pot filled with enough water to cover them well.
  2. Add salt.
  3. Bring the water to a boil over high heat, then reduce the heat to medium and simmer until the potatoes are fork tender, 15 to 20 minutes.
  4. Drain the potatoes well and return to the pot.
  5. Add salt, pepper and butter while the potatoes are still hot.
  6. Mash the potatoes with a potato masher.
  7. Add the cream.
  8. Mash the mixture until it is smooth and fluffy, 3 to 5 minutes.
  9. Beat in the horseradish and adjust seasoning, if needed.
  10. Transfer the potatoes to a micro-wave safe bowl so you can reheat before serving, if needed.

I am one of the fortune ones who really likes horseradish. Sometimes you need a change with potatoes along with some kick...this does it, nice recipe.
