We didn't feel like salad, so I just put together a bunch of veggies and it came out great!

Ingredients
  • cooking spray
  • 1/2 cup chopped green onions
  • 2 heaping Tbsp. chopped garlic (from jar)
  • 1 cup chopped cabbage
  • 1 can Italian diced tomatoes, partialy drained
  • 1 zucchini, chopped
  • 1 cup whole or halfed baby bella mushrooms

Directions
  1. heat skillet to med high heat and add cooking spray
  2. add onions and garlic and let cook for a minute
  3. add cabbage and cook for a couple of minutes
  4. add rest of ingredients and cover until mushrooms, cabbage and zucchini are cooked.
