Best Chili In The Universe Recipe
I have been perfecting this recipe for about 20 years. Everyone loves my chili. If you prefer it without beans, just omit them.

Ingredients
  • 2 1/2 lbs ground beef
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • Vegetable oil for frying
  • 1/3 cup cumin, or more to taste
  • 1/2 cup mild banana pepper rings, chopped, juice from jar reserved
  • 1-2 minced jalapeƱos (optional)
  • 1 tsp oregano
  • 12 oz Spanish chorizo, cut in 1/4" dice (optional)
  • 2 LARGE cans kidney beans
  • 3 28 oz cans chopped diced tomatoes
  • 3/4 cup lime juice
  • Salt to taste
  • Hot sauce to taste

Directions
  1. Heat oil in a large pan.
  2. Brown ground beef, onions, and garlic.
  3. Add cumin and cook a minute or two more, stirring regularly.
  4. Add banana peppers, jalapeƱos if using, and oregano and stir.
  5. Add chorizo, if using.
  6. Place mixture in crock pot or stockpot.
  7. Add tomatoes, beans, lime juice and juice from pepper jar to pot.
  8. Stir and add salt and hot sauce to taste.
  9. Cook on high for 2 hours, or low for 6 hours if using a crock pot. If using the stovetop, cook on low heat, covered, for 1 hour, stirring occasionally..
  10. Serve with shredded cheese and chopped cilantro on the side. (Some people strongly dislike cilantro, saying it tastes like soap. I happen to love it, though.)
