Best Chili In The Universe

- 2 1/2 lbs ground beef shopping list
- 2 onions, chopped shopping list
- 4 cloves garlic, minced shopping list
- vegetable oil for frying shopping list
- 1/3 cup cumin, or more to taste shopping list
- 1/2 cup mild banana pepper rings, chopped, juice from jar reserved shopping list
- 1-2 minced jalapeños (optional) shopping list
- 1 tsp oregano shopping list
- 12 oz Spanish chorizo, cut in 1/4" dice (optional) shopping list
- 2 LARGE cans kidney beans shopping list
- 3 28 oz cans chopped diced tomatoes shopping list
- 3/4 cup lime juice shopping list
- Salt to taste shopping list
- hot sauce to taste shopping list
How to make it
- Heat oil in a large pan.
- Brown ground beef, onions, and garlic.
- Add cumin and cook a minute or two more, stirring regularly.
- Add banana peppers, jalapeños if using, and oregano and stir.
- Add chorizo, if using.
- Place mixture in crock pot or stockpot.
- Add tomatoes, beans, lime juice and juice from pepper jar to pot.
- Stir and add salt and hot sauce to taste.
- Cook on high for 2 hours, or low for 6 hours if using a crock pot. If using the stovetop, cook on low heat, covered, for 1 hour, stirring occasionally..
- Serve with shredded cheese and chopped cilantro on the side. (Some people strongly dislike cilantro, saying it tastes like soap. I happen to love it, though.)
