Chocolate Chip Zuchini Muffins Recipe
I love muffins and am always trying a new recipe. These taste great with the zuchini and cinnamon... I do have another zuchini muffin recipes listed , but these do not have oats.

Ingredients
  • 1-1/2 cups all-purpose flour ( I use 1 cup whole wheat and 1/2 cup white flour)
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 egg, lightly beaten
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini
  • 1/4 cup miniature semisweet chocolate chips ( I added what I thought looked like enough ) lol...

Directions
  1. Preheat oven to 350 degrees
  2. In a bowl, combine flour, sugar, baking soda, cinnamon and salt.
  3. Combine the egg, oil, milk, lemon juice and vanillain a small bowl and mix well.
  4. Stir into dry ingredients just until moistened.
  5. Fold in zucchini and chocolate chips.
  6. Fill greased or paper-lined muffin cups two-thirds full.
  7. Bake for 20-25 minutes or until muffins are done by toothpick method
