Leftover Roast Beef Hash Recipe
Here is a great way to use up that leftover roast beef.

Ingredients
  • 2 tablespoons of oil
  • 3 cups leftover roast, cut into small cubes
  • 2 large potatoes, cut into small cubes
  • 1 medium onion, chopped
  • leftover gravy
  • water

Directions
  1. Heat oil in skillet;
  2. Add onions and potatoes and saute;
  3. As onions and potatoes begin to soften, add roast beef cubes;
  4. Stir everything well and add leftover gravy and/or water to make desired consistency (a bit thicker than a stew - you have to eyeball it and continue to add liquid during the cooking process);
  5. Continue to simmer on low until potatoes and onions are completely done and everything has melded together into one great big skillet of home-style comfort.

My dad is always making some sort of hash out of leftovers and this sounds like exactly what he's done for roast beef. Delicious!
