DELIGHTFUL FRIED FLOUNDER This recipe came from an estate sale. I obtained it when I purchased the family collection from the Stinson Estate in Fort Worth, Texas in 1992.

Ingredients
  • 4 flounder fillets
  • 1/3 cup cornmeal
  • 1/3 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon freshly ground black pepper
  • 1 egg lightly beaten
  • 1 tablespoon water
  • 1/2 cup vegetable oil

Directions
  1. Rinse fish and pat dry.
  2. Combine cornmeal, flour, salt, paprika, onion powder and pepper on sheet of wax paper.
  3. Combine egg and water in shallow dish or pie plate.
  4. Dip fish in egg mixture then coat with cornmeal mixture.
  5. Heat oil to 365 in electric skillet or heavy skillet.
  6. Fry fish for 7 minutes on each side then drain on paper towels.
