I found a recipe for chicken cordon bleu in the Kraft Food magazine but put my own spin on it. Very easy and sooo tasy!

Ingredients
  • 4 boneless skinless chicken breasts (fat removed)
  • 1 1/2 slevees of saltine crackers or stuffing cubes crushed
  • 1 can crm of chicken soup
  • 2 tbs dijon mustard
  • 8 thin slices of cooked ham
  • 8 slices swiss cheese
  • salt & pepper to taste

Directions
  1. Start by removing any fat from breasts of chicken
  2. salt & pepper, set aside
  3. mix together soup and mustard
  4. set aside enough mix (about a 1/4 cup) to spread on top of ham
  5. place chicken breasts into soup mixture to coat
  6. coat with crumbled cracker crumbs and place into greased 9 by 13 baking pan
  7. bake at 400* until chicken is cooked thru 25 to 35 minutes depending how thick the breasts are or until juices run clear
  8. top with 2 pieces of ham
  9. spread a spoonful of soup mixture on ham and top with 2 slices cheese
  10. bake for an additional 10 minutes or until cheese is melted.
  11. I serve this over stove top stuffing or along with a baked potato.
