Peppered Cornish Game Hens in sage-infused Olive Oil

- 2 fairly large hens approx. same size shopping list
- 2 1/4 inch pats of butter cut in half shopping list
- kosher salt shopping list
- 1/4 c. good drinking wine shopping list
- 4-6 cloves of garlic shopping list
- pepper mill pepper shopping list
- 2 tsp fresh grated ginger shopping list
- chiffonade of cilantro shopping list
- 6 beautiful fresh sage leaves shopping list
- virgin olive oil twice around an extra large cast iron skillet shopping list
- 1 thin pat of butter shopping list
- flour shopping list
- half and half shopping list
- ------------------------ shopping list
- frying potatoes cut in very small cubes shopping list
- cherry tomatos shopping list
- tiny button mushrooms shopping list
How to make it
- Preheat oven to 350dF
- wash birds and pat dry
- set aside
- put skillet on low heat to prepare
- ------------------------
- in a small bowl :
- ------------------------
- garlic minced very small
- 4 turns of pepper mill
- 1 large pinch kosher salt
- mix together with your fingers
- cut birds in half and make a slit between thigh and body
- rub birds with mixture in and out
- -----------------------------
- pan should be warm enuf to add oil and thin pat of butter
- as soon as butter melts fry sage quickly and remove from pan;set aside
- brown the 4 pieces of hen quickly in pan
- remove from pan and place is baking dish
- quickly brown potatoes ( do not cook, just saute quickly and place around birds in baking dish
- place baking dish in pre-heated 350d F oven

- deglaze fry pan with the white wine
- warm tomatoes and button mushrooms in fry pan salt remove set aside
- slowly incorporate flour
- low low heat
- incorporate half and half ; taste to adjust seasoning set aside for
- gravy
- ----------------------------------------
- Cook from 30-45 minutes
- ---------------------------------------
- Plate on a large warmed platter
- potatoes on either side with sage placed neatly on potatoes
- Drizzle gravy over hens
- decorate with chiffonade cherry tomatoes and mushrooms

A Cornish hens dinner was the first meal I made my husband, I was 19 and just learning how to cook. now though he is so picky he won't eat anything with bones, that's what I get for spoiling him. But I love little cornish hens. Great post :)
