Stuffed Green Peppers - South Beach Recipe

This is a recipe I altered a bit, so it's easier and South Beach-friendly. My husband likes it better with red peppers instead of green - whatever.

Ingredients
  • 4 bell peppers
  • olive oil
  • 1 lb extra-lean ground beef or turkey
  • 1 stalk celery, diced
  • 1-2 cloves garlic, minced
  • 1 small onion, diced
  • 1 medium tomato, diced
  • 1/2 - 1 package taco seasoning
  • 1/2 cup shredded low-fat cheese (or more)

Directions
  1. Wash the peppers, cut the tops off and hollow out, place in baking dish.
  2. Saute ground beef until almost cooked, drain off fat.
  3. Add in veggies. Cook until meat is no longer pink.
  4. Line insides of peppers with cheese, stuff with meat mixture, then top with cheese.
  5. Bake at 350 for 20 - 25 minutes or until the peppers are soft and the cheese is toasted.

Ya, they aren't as bitter as green peppers are. They're a nice change in recipes like this.

If using turkey, double the onion and only use 1/3 pack of taco seasoning
