Johnny Caces Gumbo

- 1 cup onion, chopped shopping list
- 3 tablespoons cooking oil shopping list
- 3 cloves garlic, crushed shopping list
- 4 tablespoons flour shopping list
- 1/2 can tomato paste shopping list
- 1 can (#2) tomatoes shopping list
- 2 quarts water shopping list
- 2 bay leaves shopping list
- Pinch of thyme shopping list
- 1 cup celery, chopped shopping list
- 2 tablespoons parsley shopping list
- salt and pepper to taste shopping list
- Dash Accent shopping list
- 1 cup crabmeat shopping list
- 2 pounds small shrimp, peeled and deveined shopping list
- 1 tablespoons file' shopping list
How to make it
- Saute' onion in oil and add garlic
- Stir in flour to make a roux
- Stir constantly as it browns
- Add tomato paste, tomatoes, water, bay leaves thyme, celery, parsley, salt, pepper, Accent and crab
- Bring to boil and simmer for 1 hour
- Add shrimp and cook 20 minutes more
- Remove from heat and take out 1 cup of broth
- To this, add gumbo file' and stir until dissolved
- Return to gumbo
- Serve over cooked rice
