Johnny Caces Gumbo Recipe
Old recipe.Have eaten at Johnny Cace's, Longview, TX, many times, This is supposed to be the recipe for their famous gumbo. My recipe is on a single page separated from old Texas cookbook. Can't locate cookbook! Delicious.

Ingredients
  • 1 cup onion, chopped
  • 3 tablespoons cooking oil
  • 3 cloves garlic, crushed
  • 4 tablespoons flour
  • 1/2 can tomato paste
  • 1 can (#2) tomatoes
  • 2 quarts water
  • 2 bay leaves
  • Pinch of thyme
  • 1 cup celery, chopped
  • 2 tablespoons parsley
  • Salt and pepper to taste
  • Dash Accent
  • 1 cup crabmeat
  • 2 pounds small shrimp, peeled and deveined
  • 1 tablespoons file'

Directions
  1. Saute' onion in oil and add garlic
  2. Stir in flour to make a roux
  3. Stir constantly as it browns
  4. Add tomato paste, tomatoes, water, bay leaves thyme, celery, parsley, salt, pepper, Accent and crab
  5. Bring to boil and simmer for 1 hour
  6. Add shrimp and cook 20 minutes more
  7. Remove from heat and take out 1 cup of broth
  8. To this, add gumbo file' and stir until dissolved
  9. Return to gumbo
  10. Serve over cooked rice
  11. THIS RECIPE WAS LOST, AND AM NOT QUITE SURE OF THE SERVINGS, ONLY GUESSING. IF YOU ARE GUMBO HUNGRY, THAT IS A WHOLE NEW GUESSING GAME! :) ENJOY
