Fish Veracruzana Recipe
This is my family's favorite. Even my picky eater likes it.

Ingredients
  • 1 lb fish - scrod, catfish, flounder - cut in chunks
  • 3 large new potatoes, scrubbed (not peeled) and cut in half
  • 3 T oil
  • 2 medium onions, sliced thin
  • 2 bell peppers (any color), seeded and sliced
  • 2 anaheim or 1 poblano chili, seeded and sliced (I use a dash of hot sauce instead)
  • 1/2 cup white wine
  • 4 T lime juice
  • 2 tsp minced garlic
  • 1 1/2 cup tomato puree or diced tomatoes
  • 1 bunch cilantro (optional)

Directions
  1. Put potatoes through the thick blade of a food processor.
  2. Heat oil in an extra large skillet.
  3. Saute onions until translucent, then move them to the side
  4. and add potatoes
  5. Cook, stirring often, until the potatoes take on color
  6. Add peppers, chilies, and lime juice.
  7. Cook until the potatoes soften, about 15 minutes.
  8. Add half of cilantro leaves (if using), tomatoes, and fish.
  9. Cover fish with vegetables.
  10. Cook 8 minutes, until fish is done.
  11. Serve with remaining cilantro and lime wedges for garnish.
