This salad developed on an extremely hot Sunday in early January in Cape Town. It goes with cold meats and more salads or can also be a light lunch on it's own.

Ingredients
  • Salad Greens
  • Bell Peppers (Various Colours)
  • Mushrooms
  • Boiled Eggs
  • Cherry Tomatoes
  • Diced Bacon
  • Olive Oil
  • Balsamic Vinegar
  • Salt
  • Freshly Ground Pepper
  • Your favourite flavouring spice eg Rosemary & Olive

Directions
  1. Boil two eggs (6 minutes)
  2. Place a handful of diced bacon in a saucepan and fry until dark brown.
  3. Set aside and let cool
  4. Roast strips of bell peppers in the same pan until soft with black spots
  5. Set aside and let cool
  6. Place sliced mushrooms in pan and spice with your favourite spice
  7. Saute until dark brown, set aside and let cool
  8. Halve a few cherry tomatoes
  9. Place the salad greens in a flat bowl
  10. Spread the now cooled peppers evenly over the bed of salad
  11. Do the same with the cooled bacon and the mushrooms
  12. Cut the eggs in thin slices
  13. Garnish with the halved tomatoes and slices of egg
  14. Sprinkle with olive oil and balsamic (3 olive oil to 1 balsamic)
  15. Add salt and pepper to taste
  16. Enjoy with slices of cold Kassler and a cucumber & zucchini salad
