Tostada Goop Recipe
This recipe was originally an enchilada filling in Knudsen's "Cooking for Complements." I usually use it either as a base for tostadas or served over rice and topped with fat-free sour cream.

Ingredients
  • (all quantities can be adjusted to taste and/or availability)
  • 1 lb lean ground beef
  • 1 onion, finely chopped
  • 1 can refried beans
  • 2 small cans chopped olives
  • 2/3 tsp salt
  • 1/2 tsp garlic powder
  • 1/3 cup taco sauce (I use 1/4 cup of La Victoria Salsa Brava with enough water to make 1/3 cup)

Directions
  1. Crumble and brown ground beef, drain and set aside.
  2. While the meat is browning, mix remaining ingredients.
  3. Add beef and mix well.
  4. Cover and microwave on full power for 10 minutes or until heated through.
