Chicken Cacciatore

- 3 pounds chicken thighs shopping list
- 1/2 cup thinly sliced onion shopping list
- 1/2 cup cubed green pepper shopping list
- 2 tbsp margarine shopping list
- 1/2 pound fresh mushrooms shopping list
- 2 cloves of garlic shopping list
- 1 8 oz. can of stewed tomatoes shopping list
- 1 8 oz. can tomato sauce shopping list
- 1/2 cup red wine shopping list
- 1 bay leaf shopping list
- 2 tsp sugar shopping list
- 1/2 tsp basil shopping list
- 1/2 tsp thyme shopping list
- 1/2 tsp oregano shopping list
- 1/2 tsp salt shopping list
How to make it
- In a 3 quart saucepan, over medium heat, saute onion and green pepper in margarine until onion is transparent and pepper is tender.
- Add mushrooms and garlic, cook 2 to 3 min.
- Stir in tomatoes, tomato sauce, wine, and herbs.
- Bring to boil.
- Add chicken , reduce heat to low, cover and cook 1 1/2 hours.
- Serve over spaghetti or rice.
