Spicy minced meat with tofu and mushrooms

- 50g minced pork/chicken/beef shopping list
- 150g block tofu, cubed shopping list
- 100g fresh button mushrooms (both white or brown is fine), diced to small cubes shopping list
- 1 tbsp olive oil shopping list
- 1 tbsp chopped garlic shopping list
- 1/2 tbsp salted soya beans (aka dou jiang, ‘tao cheow‘, 豆酱) shopping list
- 1 tsp dried fermented black beans shopping list
- 2 red chilli, deseeded and finely chopped shopping list
- cornstarch solution (1 tbsp water with 1/2 tbsp cornstarch) shopping list
- chopped spring onions and fried shallots for garnishing shopping list
- Marinade: shopping list
- 1/2 tsp light soy sauce shopping list
- 1/4 tsp sugar shopping list
- 1/2 tsp corn starch shopping list
- 1/2 tsp sesame oil shopping list
- ground white pepper shopping list
- seasoning (mixed well): shopping list
- 1/2 cup water shopping list
- 1/2 tsp dark soy sauce shopping list
- 1/4 tsp sugar shopping list
- 1/2 tbsp sesame oil shopping list
How to make it
- In a bowl, mix minced meat with marinade and leave for 10 minutes.
- Heat oil in wok and add the garlic, salted soya beans, fermented black beans and chill. Stir fry till fragrant. Next, add the marinated meat and stir fry till cook, breaking it up to small bits using the frying turner.
- Add mushrooms and seasoning. Mix evenly. Bring to a boil.
- Gently add beancurd and cook over low heat for 3-5 minutes. Take care not the break the tofu cubes.
- Thicken with cornstarch solution.
- Garnish with spring onions and fried shallots. Serve with warm, fluffy white rice.
