How to make it

  • place flour, yeast, salt and sugar ina bowl. Make a well in the center and pour in 1 cup lukewarm water and 1 tbsp of oil. Mix to a dough and knead on a floured surface until smooth and elastic.
  • Place the dough in a large oiled bowl, cover with plastic wrap and leave in a warm place until doubled in size. Knead the dough for 3-4 minutes.
  • after punching the dough down, knead it for 3=4 minutes. brush a large shallow baking pan with about 1 tbsp oil. Place dough in pan, and use fingers to press it into an even layer 1 inch thick. cover dough with a clean cloth, and leave to rise in warm place for 30 minutes.
  • Preheat oven to 400 degrees during this time.
  • While focaccia is rising, heat 3 tbsp of oil in fry pan. add onion and cook over low heat until soft. Stir in thyme.
  • Just before baking, use your fingers to press rows of indentations into the surface of the focaccia. Lightly brush with remaining oil.
  • Spread onion over top and sprinkle lightly with sea salt.
  • Bake 25 miinutees, or until golden.
  • cut into squares and serve warm
