Focaccia with Onions

- 3 cups flour shopping list
- 1 pkg dried fast action yeast shopping list
- 1 tsp salt shopping list
- pinch of sugar shopping list
- 5 tbsp olive oil shopping list
- 1 medium onion, sliced very thinly and cut into short lengths shopping list
- 1/2 tsp fresh thyme leaves shopping list
- coarse sea salt shopping list
How to make it
- place flour, yeast, salt and sugar ina bowl. Make a well in the center and pour in 1 cup lukewarm water and 1 tbsp of oil. Mix to a dough and knead on a floured surface until smooth and elastic.
- Place the dough in a large oiled bowl, cover with plastic wrap and leave in a warm place until doubled in size. Knead the dough for 3-4 minutes.
- after punching the dough down, knead it for 3=4 minutes. brush a large shallow baking pan with about 1 tbsp oil. Place dough in pan, and use fingers to press it into an even layer 1 inch thick. cover dough with a clean cloth, and leave to rise in warm place for 30 minutes.
- Preheat oven to 400 degrees during this time.
- While focaccia is rising, heat 3 tbsp of oil in fry pan. add onion and cook over low heat until soft. Stir in thyme.
- Just before baking, use your fingers to press rows of indentations into the surface of the focaccia. Lightly brush with remaining oil.
- Spread onion over top and sprinkle lightly with sea salt.
- Bake 25 miinutees, or until golden.
- cut into squares and serve warm
