Raisin Cashew Chocolate Fudge Recipe
This is my variation on Mom's secret fudge.. It's sort of like the old fashion Chunky candies..

Ingredients
  • 1 king size Hershey Chocolate Bar.... (7 - 8 oz.)
  • 12 oz. bag of Nestle's chocolate Dots --- mini semi sweet chocolate chips
  • 1 cup cashews, unsalted, chopped
  • 1/2 cup pecans ,chopped
  • 1/2 -3/4 cup raisins
  • 1 jar ( 7-8 oz.) Marshmallow Fluff
  • ................................................................
  • 1/3 cup Butter
  • 1 cup evaporated milk
  • 4 1/2 cups superfine sugar
  • extra butter

Directions
  1. In a large heavy bowl that can stand heat
  2. break up Hershey Bar into pieces
  3. add chocolate dots on top
  4. then add the nuts and then the raisins
  5. and top with marshmallow fluff
  6. put in a warm spot so the chocolate starts to soften
  7. ........................................................................................
  8. In a heavy Pan.... butter the sides and bottom of the pan heavily
  9. put in 1/3 cup of butter and the evaporated milk
  10. heat until warm
  11. slowly add the sugar.. stir after each addition..
  12. make sure the dry sugar does not touch the sides of the pan
  13. don't stir too hard .. you don't want the sugar mixture all over the sides of the pan
  14. heat slowly until the sugar is dissolved keep stirring
  15. DON"T scrap the sides of the pan
  16. the turn the heat up to medium
  17. using a candy thermometer bring temperature to 230 - 232' F
  18. stir mixture to keep from burning
  19. pour hot sugar mixture over chocolate mixture in the bowl
  20. DO NOT scrape the pot out
  21. use a new spoon and blend the together as quickly as possible
  22. DON"T over mix. there will be some streaks of the fluff thats ok
  23. spread mixture on a well buttered jelly roll pan.( large spatula works)
  24. work quickly. this fudge sets up very fast
  25. cover tightly with plastic wrap and then foil..
  26. put in a cold spot for 4 hours... cut into pieces
  27. ....................................................
  28. keep wrapped tightly.. this fudge dries out very fast...
