How to make it

  • Carefully remove stems from mushrooms and clean thoroughly.
  • Marinate in vinegar, miso, soy sauce for one hour.
  • Dice mango and bell pepper then chop jalapeno and toss with vinegar.
  • Clean lettuce and separate into single leaves.
  • Grill the mushrooms on both sides.
  • When grilling the top turn mushroom 90 degrees halfway through to get diamond pattern.
  • To serve fan 3 lettuce leaves on plate and center a mushroom and top with a dollop of chutney.
