Mickeys Stuffed Bell Peppers With Cheese Sauce

- 6 fresh, large bell peppers shopping list
- 1 ½ lbs. ground beef shopping list
- 1 ½ onion, finely diced shopping list
- 3 cups cooked rice shopping list
- 1 (14 ½ oz.) can diced tomatoes with mild chiles shopping list
- 1 (14 ½ oz.) can tomato sauce shopping list
- dash of thyme shopping list
- salt and pepper shopping list
- 1 tbsp. olive oil shopping list
- 1 tbsp. butter shopping list
- cheese sauce: shopping list
- 3 tablespoons butter shopping list
- 3 tablespoons flour shopping list
- 2 ½ - 3 cups milk shopping list
- 2/3 of medium sized box of cheese spread shopping list
How to make it
- Preheat oven to 350°.
- Cut tops off bell peppers and remove seeds.
- Add to pot of boiling water and boil for approximately 5 minutes.
- Remove and drain. Stand up peppers in a 13x9 casserole dish, cut side up.
- In a large frying pat, melt butter and add olive oil. Add diced onions
- and sauté until translucent but not browned. Add ground beef and
- with a wooden spoon, break up into small pieces.
- Saute until meat is no longer pink.
- Cook rice according to package directions.
- (Michele uses Trader Joe's frozen brown rice and microwaves 2 packages brown rice, for 3 minutes each. )
- When done,let rice set a minute and then add to the meat mixture. Shake a dash or two of dried thyme leaves, salt and pepper to taste into the meat mixture.
- Stir and add the canned tomatoes and tomato sauce. Mix well. Simmer for 20 minutes.
- Fill bell peppers with meat mixture.
- Cover dish lightly with foil and bake for approx. 40 minutes.
- Remove foil the last 15 minutes.
- Cheese Sauce:
- In a sauce pan, melt butter and add flour.
- Whisk well; when the mixture begins to bubble, slowly add milk, continuing to whisk.
- Stir constantly until mixture starts to thicken and begins to boil.
- Add cheese spread (Michele uses Velveeta brand) to sauce and stir until melted.
- Remove from heat.
- Plate one stuffed pepper and cut in half. Drizzle cheese sauce over. Enjoy!
