Mickeys Stuffed Bell Peppers With Cheese Sauce Recipe
This is comfort food from my past. Another good winter recipe.Whenever my mother made this dish for us kids, it was considered a special treat. I make it a couple of times a year and wouldn't think of making it without the sauce!

Ingredients
  • 6 fresh, large bell peppers
  • 1 ½ lbs. ground beef
  • 1 ½ onion, finely diced
  • 3 cups cooked rice
  • 1 (14 ½ oz.) can diced tomatoes with mild chiles
  • 1 (14 ½ oz.) can tomato sauce
  • dash of thyme
  • salt and pepper
  • 1 tbsp. olive oil
  • 1 tbsp. butter
  • cheese sauce:
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 ½ - 3 cups milk
  • 2/3 of medium sized box of cheese spread

Directions
  1. Preheat oven to 350°.
  2. Cut tops off bell peppers and remove seeds.
  3. Add to pot of boiling water and boil for approximately 5 minutes.
  4. Remove and drain. Stand up peppers in a 13x9 casserole dish, cut side up.
  5. In a large frying pat, melt butter and add olive oil. Add diced onions
  6. and sauté until translucent but not browned. Add ground beef and
  7. with a wooden spoon, break up into small pieces.
  8. Saute until meat is no longer pink.
  9. Cook rice according to package directions.
  10. (Michele uses Trader Joe's frozen brown rice and microwaves 2 packages brown rice, for 3 minutes each. )
  11. When done,let rice set a minute and then add to the meat mixture. Shake a dash or two of dried thyme leaves, salt and pepper to taste into the meat mixture.
  12. Stir and add the canned tomatoes and tomato sauce. Mix well. Simmer for 20 minutes.
  13. Fill bell peppers with meat mixture.
  14. Cover dish lightly with foil and bake for approx. 40 minutes.
  15. Remove foil the last 15 minutes.
  16. Cheese Sauce:
  17. In a sauce pan, melt butter and add flour.
  18. Whisk well; when the mixture begins to bubble, slowly add milk, continuing to whisk.
  19. Stir constantly until mixture starts to thicken and begins to boil.
  20. Add cheese spread (Michele uses Velveeta brand) to sauce and stir until melted.
  21. Remove from heat.
  22. Plate one stuffed pepper and cut in half. Drizzle cheese sauce over. Enjoy!
