Rich Os Beer Cheese

Rich-O's is a famous beer and pizza place in Southern Indiana that is a haven for pizza lovers. Some beer cheese is thick enough to spread. This one is thinner, suitable for dipping.
Ingredients
- 2 lbs sharp cheddar cheese, grated shopping list
- 16oz cream cheese shopping list
- 8 to 12 oz. dark beer shopping list
- 1/2 Tbsp garlic powder shopping list
- 1/2 Tbsp crushed red pepper, or less, depending on how spicy you want it. shopping list
- 1 1/2 tsp cayenne shopping list
- 1/2 Tbsp ground black pepper shopping list
How to make it
- In a double boiler, melt the cheddar and cream cheese.
- When melted and smooth, add one cup of beer and spices.
- Stir well to blend. Add more beer for thinner texture if desired.
- Serve with crackers, pita triangles, or crudites. Makes about a quart.
