Bruschetta With Carmelized Peppers And Onions With Goat Cheese Recipe
An easy, delicious, and quick appetizer to make for guests. I found this on the Birds Eye website. Using the frozen pepper stirfry adds alot of flavor without alot of prep.

Ingredients
  • 1 long baguette, cut into 30 (½ in) slices
  • ¼ cup olive oil
  • 2 Tbsp butter
  • ¼ cup brown sugar
  • 1-16oz bag Birds Eye Frozen Pepper Stir-Fry
  • 1½ Tbsp balsamic vinegar
  • Salt & black pepper
  • 4 oz fresh goat cheese, crumbled
  • Fresh basil leaves, cut into a strips (optional)

Directions
  1. Heat oven to 350°F. Put baguette slices on baking sheet and brush tops with oil. Bake in oven until golden brown. In large skillet melt the butter and brown sugar, add the pepper stir-fry and cook over MEDIUM heat for 10 to 12 minutes, or until all the moisture has evaporated and the vegetables are caramelized. Season with salt and pepper to taste. Top each baguette slice with a portion of the pepper mixture and some of the crumbled goat cheese. Sprinkle on basil. Serve while warm.
