Bruschetta with Carmelized Peppers and Onions with Goat Cheese

- 1 long baguette, cut into 30 (½ in) slices shopping list
- ¼ cup olive oil shopping list
- 2 Tbsp butter shopping list
- ¼ cup brown sugar shopping list
- 1-16oz bag Birds Eye Frozen pepper Stir-Fry shopping list
- 1½ Tbsp balsamic vinegar shopping list
- salt & black pepper shopping list
- 4 oz fresh goat cheese, crumbled shopping list
- fresh basil leaves, cut into a strips (optional) shopping list
How to make it
- Heat oven to 350°F. Put baguette slices on baking sheet and brush tops with oil. Bake in oven until golden brown. In large skillet melt the butter and brown sugar, add the pepper stir-fry and cook over MEDIUM heat for 10 to 12 minutes, or until all the moisture has evaporated and the vegetables are caramelized. Season with salt and pepper to taste. Top each baguette slice with a portion of the pepper mixture and some of the crumbled goat cheese. Sprinkle on basil. Serve while warm.
