My aunty taught me how to make this, it's beautiful. The topping is especially wonderful. It keeps well, if it lasts more than a day at all

Ingredients
  • 2 cups comprising of chopped up apples and dried dates.
  • 1 cup of boiling water
  • 1 heaped tsp of baking soda
  • a drop or 2 of vanilla essence
  • 1/2 c of brown sugar
  • 125g butter
  • 2 eggs
  • a bit of cinnamon
  • 1 and 1/2 cups of flour
  • --topping --
  • 60g butter
  • 60g white sugar
  • 1-2 cups of dessicated coconut
  • enough milk to bind those together well

Directions
  1. Preheat oven to 180 degrees celsius. grease/line a 20cm diameter cake tin. then wash your hands.
  2. so. chop up your apples and dates, and add to them the cinnamon and a sprinkle of sugar
  3. make sure that your cup of water is BOILING, like straight out of the kettle boiling, and add the baking soda, stirring until it dissolves. It should FIZZ LOUDLY. If it doesn't, then do it again. Pour this over the fruit in a bowl, and set aside.
  4. Cream the butter and brown sugar until light and fluffy. then beat the eggs in one at a time.
  5. And then add the essence.
  6. then alternately mix in the fruit mixture (including the liquid thereof) and the sifted flour, adding more flour if the mixture is too sloppy.
  7. pour into the cake tin and pop in the over for 45-50 minutes, or until the cake springs back when touched lightly.
  8. FOR THE TOPPING
  9. When your cake is nearing the 45 minute mark, put the butter, sugar and coconut and milk into a bowl and microwave for about a minute. stir to combine. the coconut should bind into funny clumps, but still be fairly runny.
  10. When the cake is done, spread the topping over it evenly and then either put it back in the oven for 20 minutes, or, if you're in a hurry, grill it for about 5 minutes. Just keep it going until the coconut is a pretty golden-but-still-white colour.
  11. eat it as you like :D
  12. look, I even took a pic from the last time I made it, just because it's so pretty. That one was the TEENIEST bit overdone, but still lovely.
