Ingredients
  • 2 (16-ounce) cans peas, gently rinsed and drained
  • 1 cup finely diced cheddar cheese
  • 1 cup finely diced celery
  • 1/2 cup thinly sliced sweet pickles
  • 1/2 cup diced pimientos
  • 1/2 cup mayonnaise
  • Salt and pepper

Directions
  1. In medium bowl, combine peas, cheese, celery, pickles, pimientos, mayonnaise, and salt and pepper to taste. Toss lightly to coat evenly. Cover and chill for at least 2 hours.

Ha, can't believe anybody but me makes this. I learned it from my x mil. Also put hard-boiled eggs & bacon in mine. Thanks Dix-haven't made this in ages.

This is similar to a family recipe of my mom's. We use dill pickles and their juice and generally dice up some ham and sometimes hard boiled eggs as well. Haven't had this is a while, makes me think of holidays.


A great recipe. When I make mine, I use frozen peas that I have just barely cooked, dill pickle, sliced radishes, celery and add a dash of curry powder to the mayonnaise. Just another twist on a great recipe! Thanks for reminding me of this!
