How to make it

  • In medium pan, cook potatoes in boiling, salted water for 25 minutes, or until tender. Drain. Cool.
  • Meanwhile, cook green beans in boiling water for 12 to 14 minutes, or until tender. Drain and rinse with cold water.
  • Peel and dice potatoes. Toss with green beans, onions, olive oil, white wine vinegar, sugar, and salt and pepper to taste. Chill.
