Lemony Stuffed Flounder Fillets Recipe
An easy, moist dish. You may use any white fish you like, bake according to thickness off fillets. Make sure fish flakes easily with a fork.

Ingredients
  • 1/3 C butter
  • 1/3 C celery, chopped
  • 2 Tbl onion, chopped
  • 1 Tbl parsley
  • 1 C herb seasoned stuffing
  • 1 Tbl lemon juice
  • 1 tsp lemon peel
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 lb flounder or other white fish
  • 1/3 C butter
  • 1/2 tsp dill weed

Directions
  1. Preheat oven to 350
  2. In a 1 qt saucepan melt butter and saute celery and onion until tender
  3. Stir in stuffing, parsley, lemon juice and peel, salt and pepper; set aside
  4. Cut each fillet to make 8 halves; place 4 halves in an ungreased square baking dish or pan
  5. Top each with 1/4 C of the stuffing and top with remaining halves
  6. Melt 1/3 C butter; stir in dill weed
  7. Pour dill butter over fillets
  8. Bake in center of oven 20 to 30 minutes or until fish flakes
  9. Spoon sauce over fish and return to oven for an additional 5 minutes

Hey guys... great post. I'm usually a stronger "flavor" fish guy.. but this will be tried the next time I get some fresh flounder fillets from the coast... thanks.....dave
