Zucchini Pepperjack Casserole

- 1/2 C. seasoned bread crumbs shopping list
- 2 lb. zucchini, thinly sliced shopping list
- ½ lb mushrooms, sliced shopping list
- ½ onion, chopped shopping list
- 1 small can sliced olives shopping list
- 8 oz. monterey jack cheese, cubed shopping list
- 8 oz. pepper jack cheese, cubed shopping list
- 6 eggs shopping list
- 3/4 C. milk shopping list
- garlic pepper, to taste shopping list
- 3 tsp. baking powder shopping list
- 5 T. all-purpose flour shopping list
- 1 T. butter shopping list
How to make it
- Preheat the oven to 325 degrees F.
- Generously butter a 9x13 inch baking dish, and coat with some of the bread crumbs.
- Place zucchini into the pan, top with mushrooms, onions, olives and distribute cheeses evenly over the top.
- In med bowl, mix together eggs, milk, salt, baking powder and flour.
- Spoon over top of the casserole, and dot with butter.
- Sprinkle remaining bread crumbs over the top.
- Bake for 45 min in the preheated oven, or until topping is cooked through.
