Ingredients
  • 1 T olive oil
  • 3 garlic cloves, minced
  • 1 1/4 lb boneless, skinless chicken thighs, cut into 1-inch chunks
  • 1 medium zucchini squash, cut into chunks
  • 1 T dried basil
  • 2 T vinegar
  • 2 medium tomatoes, cut into chunks
  • 1/4 t pepper
  • cooked rice or pasta, follow package directions

Directions
  1. Heat oil in skillet.
  2. Sauté garlic.
  3. Add chicken and cook until no longer pink.
  4. Remove chicken from skillet and keep warm.
  5. Combine zucchini squash, tomatoes, basil and vinegar.
  6. Toss to coat vegetables well.
  7. Pour into skillet and stir-fry 3-5 minutes.
  8. Return chicken to skillet and heat through.
  9. Serve immediately over rice or pasta.
