Basil Chicken Medley

- 1 T olive oil shopping list
- 3 garlic cloves, minced shopping list
- 1 1/4 lb boneless, skinless chicken thighs, cut into 1-inch chunks shopping list
- 1 medium zucchini squash, cut into chunks shopping list
- 1 T dried basil shopping list
- 2 T vinegar shopping list
- 2 medium tomatoes, cut into chunks shopping list
- 1/4 t pepper shopping list
- cooked rice or pasta, follow package directions shopping list
How to make it
- Heat oil in skillet.
- Sauté garlic.
- Add chicken and cook until no longer pink.
- Remove chicken from skillet and keep warm.
- Combine zucchini squash, tomatoes, basil and vinegar.
- Toss to coat vegetables well.
- Pour into skillet and stir-fry 3-5 minutes.
- Return chicken to skillet and heat through.
- Serve immediately over rice or pasta.
