Spanakopita Spinach Pie

- 4 10 ounce pkg frozen, chopped spinach shopping list
- 1 1/4 lb domestic feta (less sodium) shopping list
- 2 bunches of scallions shopping list
- 1 8 ounce small curd cottage cheese shopping list
- 1 long box of filo dough shopping list
- 1 lb or more of butter shopping list
- 8 large eggs shopping list
How to make it
- 350 oven
- Thaw spinach and squeeze dry
- Chop scallions in food processor, must be chopped fine
- Cut feta into pieces and put through processor
- In a large bowl mix scallions, feta cheese, cottage cheese, spinach and eggs until well blended
- While you are doing this let filo come to room temperature, about 1/2 hour or so
- Melt the butter
- In a 13x9x2 1/2 roasting pan use a brush and generously butter the pan, bottom and sides
- Take 6 to 7 sheets of filo and line bottom of pan making sure to cover completely by overlapping if necessary
- Brush filo generously with butter
- Spread first layer of spinach mixture and cover the dough
- repeat with 5 layers of filo, butter and mixture until everything is used up.
- Last layer should be about 7 sheets of dough, use broken pieces if necessary and butter dough generously.
- All the butter should be used up during this process, it is the key to this dough
- Take your brush and go around the pie and smooth all the rough edges
- Place in preheated 350 oven and bake 1 1/2 hours or until dark golden brown
- Cool about 2 hours before cutting
- Make 10 slits in pie all the way to the bottom when cooling
