Good use for leftover roast lamb (if you have any). The number of servings depend on how much lamb you have. I found this recipe years ago, so I can' t give proper credit. I've strayed somewhat from the original to streamline it.

Ingredients
  • 2 cups (or more) chopped leftover roast lamb
  • Leftover gravy or pan juices
  • 1 large onion, chopped
  • 2 Tbs dried parsley
  • salt/pepper to taste
  • Mashed potatoes (fresh, leftover, or refrigerated)

Directions
  1. Combine the lamb with onion, gravy/juices, parsley, and salt and pepper.
  2. Top with mashed potatoes, leaving a small "vent" on the side for steam to escape.
  3. Bake 350 degrees for 35 - 40 mins.
