How to make it

  • Preheat the oven to 325°F.
  • Steam endives.
  • Beat egg yolks with cream cheese and 3/4 of the grated Swiss cheese, salt, and pepper.
  • Place endives in an ovenproof dish and cover with the mixture.
  • Sprinkle with the remaining grated cheese. Cover the dish and cook for 25-30 minutes.

    This should be in a low-carb cook book! I always end up throwing our yolks because I don't use them often enough...now I have a recipe to save them for! Thanks!
