How to make it

  • My 12 inch iron skillet is perfect for this dish
  • In a large iron skillet, saute' the green and red bell peppers, onion,
  • and minced garlic in the olive oil on low heat until tender
  • Remove from burner
  • Prepare the yellow rice according to directions
  • Sprinkle both sides of the pork chops with garlic powder, salt and pepper
  • Then place them on top of the peppers, onion, and garlic
  • Next cover the pork chops with the yellow rice
  • Next pour tomato sauce over the rice
  • Then add Louisianna hot sauce (shake and dash it over all)
  • Last, add the 1/2 cup water
  • Place the iron skillet, uncovered, in a 350 degree oven for 1 hour

    Yeah, pork chops. That's how they did it in the old days-with whatever they had. Great post RMB.
