Rustic Pork Chop Jambalaya Recipe
Cooked in iron skillet,center jambalaya,"slap dab" in middle of the table for all to see. Rustic,colorful,spicy;easy! Serve with a beautiful green salad,rustic French bread.Puts all at ease to enjoy the meal.Sparks conversation.Perfect combo. :)

Ingredients
  • 6 pork chops
  • Garlic powder
  • Salt and pepper to taste
  • 1 green bell pepper, sliced in thin strips
  • 1 red bell pepper, sliced in thin strips
  • 1 medium onion cut into rings
  • 1 package yellow rice, *cooked*
  • 1 can tomato sauce
  • 1 tablespoon minced garlic
  • 4 tablespoons olive oil
  • 8-10 dashes Louisiana hot sauce
  • 1/2 cup water

Directions
  1. My 12 inch iron skillet is perfect for this dish
  2. In a large iron skillet, saute' the green and red bell peppers, onion,
  3. and minced garlic in the olive oil on low heat until tender
  4. Remove from burner
  5. Prepare the yellow rice according to directions
  6. Sprinkle both sides of the pork chops with garlic powder, salt and pepper
  7. Then place them on top of the peppers, onion, and garlic
  8. Next cover the pork chops with the yellow rice
  9. Next pour tomato sauce over the rice
  10. Then add Louisianna hot sauce (shake and dash it over all)
  11. Last, add the 1/2 cup water
  12. Place the iron skillet, uncovered, in a 350 degree oven for 1 hour
