Cottage Cheese Quiche Recipe
Very creamy and delicious; the sour cream crust makes it rich. A favourite with family.

Ingredients
  • *Crust:
  • 9 Tbsp cold unsalted butter
  • 1 cup flour
  • 1/3 cup sour cream
  • *Filling:
  • 6 slices bacon
  • 2 Tbsp minced flat-leaf parsley
  • 3/4 cup cottage cheese
  • 1 1/8 cups heavy cream
  • 6 egg yolks
  • 1/4 tsp salt
  • Pinch of white pepper
  • *Optional: 1/2 cup shredded cheddar, jack or havarti cheese

Directions
  1. Prepare crust dough: Cut butter into small pieces (about the size of a dime) and toss with flour to coat. Add sour cream and mix just until combined. Form a flattened ball, wrap in plastic and refrigerate for at least 1 hour.
  2. Prepare filling: Cook bacon until crisp. Drain well, crumble and set aside. Place cottage cheese in a plastic bag and mash until smooth, or use a hand blender on low speed to smooth.
  3. Whisk together cream, egg yolks, salt, pepper and cottage cheese just until combined.
  4. Preheat oven to 375F.
  5. *Assemble quiche: Remove dough from fridge and roll out to 1/8" thickness. Line an 8" pie plate with the dough and poke holes in the bottom with a fork to allow steam to escape during cooking.
  6. Sprinkle the crust with the bacon and parsley, distributing evenly. Pour cottage cheese-egg mixture over the top.
  7. Put quiche in 375F oven and immediately lower the temperature to 350F. Bake for 35 minutes or until set in center.
  8. *Optional: Halfway through baking, sprinkle top of quiche with 1/2 cup of shredded cheddar, jack or havarti cheese.
