Bistro Chicken

- 2 tsp.olive oil or vegetable oil shopping list
- 3 cups sliced fresh mushrooms shopping list
- 1 medium onion, chopped shopping list
- 1 can (15 oz.) stewed tomatoes, undrained shopping list
- 1/4 cup Italian salad dressing shopping list
- 3 Tbsp. tomato paste shopping list
- 4 boneless skinless chicken breast halves shopping list
- 1 cup shredded mozzarella cheese shopping list
- 2 slices bacon, crumbled shopping list
How to make it
- HEAT oil in large skillet on medium-high heat. Add mushrooms and onions (or just onions); cook 5 min., stirring occasionally. Stir in tomatoes with their liquid, the dressing and tomato paste.
- ADD chicken; cover. Reduce heat to medium-low. Simmer 12 min. or until chicken is cooked through.
- SPRINKLE with cheese and bacon; simmer, uncovered, 5 min. or until cheese is melted. Serve over hot cooked rice, if desired.
