Salmon Linguine With White Wine Sauce Recipe
A simple and elegant main dish or pasta course. A great way to stretch smoked salmon to feed more people!

Ingredients
  • Olive oil
  • 3 green onions, washed and chopped
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup white wine (Chardonnay is good)
  • 1 1/2 cups milk
  • 1/2 tsp. salt
  • Fresh-ground black pepper
  • 1/4 lb. smoked salmon, cut in small bits
  • 1 1/4 lbs. linguine
  • Fresh-grated Parmesan cheese
  • (optional: handful toasted pine nuts)

Directions
  1. In a small saucepan, sauté onions in olive oil until just limp. Remove from heat.
  2. In another pan, melt the butter and as soon as it's melted, stir the flour in all at once, whisking until completely smooth.
  3. Remove from heat and whisk in wine.
  4. Return to heat and whisk in milk, salt and pepper to taste.
  5. Cook, stirring regularly, over medium heat until boiling; cook, stirring constantly, for 2 minutes more.
  6. While doing the above, start heating water for pasta on another burner; when boiling, add pasta and cook al dente. Drain and keep hot.
  7. Remove sauce from heat; stir in onions and salmon.
  8. Return to burner and heat through, until salmon is hot but not rubbery!
  9. Pour sauce over hot pasta and toss.
  10. Serve immediately, passing the parmesan cheese (and sprinkle with pine nuts if desired).

This sounds great.


We smoke our salmon, and we always have some leftover. We usually just put it on a spinach salad, but this sounds great! I'm saving this one and will be buying some salmon really soon!
