Ranch Potato Casserole

- 6-8 medium red potatoes(about 2 1/2 pounds) shopping list
- 1/2 cup sour cream shopping list
- 3/4 cup ranch dressing shopping list
- 1/2 cup cooked crumbled bacon or bacon bits shopping list
- 2 tablespoon minced fresh parsley(or 1 tablespoon dried) shopping list
- 1 cup sharp cheddar cheese shopping list
- Topping: shopping list
- 1 cup sharp cheddar cheese shopping list
- 1 8oz can french fried onions shopping list
How to make it
- Cook potatoes until tender. Cut into quarters leaving skins on if desired. Set aside.
- In a large mixing bowl,combine sour cream,dressing,bacon, parsley,and 1 cup cheddar cheese.
- Add potatoes and toss gently.
- Pour into greased 9" x 13" baking dish.
- Cover with foil and bake at 350 degrees for 35 minutes
- Prepare topping:
- Mix remaining cup of cheese with fried onions.
- Sprinkle over potatoes and return to oven uncovered for 10 minutes or until cheese is melted and onions are browned.

I just posted a similar recipe using the Crock pot, but recipe doesn't have the french fried onions. A great addition to a great dish. Thanks
