I love fresh salad dressing, and this recipe came from a dear friend, and I love it! Enjoy! :)

Ingredients
  • * Half Cup good Olive Oil,
  • * Half Cup White Wine Vinegar,
  • * 2 heaped teaspoons mild honey
  • * Juice of half a lemon,
  • * 1 clove garlic,crushed
  • * quarter teaspoon salt,
  • * Pepper, freshly ground,
  • * Mint Leaves freshly harvested (if available)

Directions
  1. Blend , whisk and shake all together.
  2. Just before serving add freshly chopped or torn Mint leaves to taste.
  3. Serve over fresh greens and vegetables!
  4. Store any leftover vinaigrette in fridge.

The mint wasn't really noticeable; maybe I didn't add enough? This was actually better with italian bread than salad greens.
