I've been making this dish over twenty years. It's a recipe that is fun and allows you to get lost in thought. Very tasty.

Ingredients
  • 8 Pieces (about 8 oz.) Curly Edge Lasagne, uncooked
  • 2 T Olive Oil
  • 1/4 C Finely Chopped Onion
  • 1 3/4 C (14 1/2 oz. can) Ready-Cut Italian Style Tomatoes
  • 2/3 C (6 oz. can) Tomato Paste
  • 1/2 C water
  • 1 3/4 C (15 oz. container) Ricotta Cheese
  • 1 1/4 C (10 oz. package) Frozen Chopped Spinach, thawed, well drained.
  • 1 C Shredded Mozzarella Cheese, divided
  • 1 egg, slightly beaten
  • 2 T Grated Parmesan Cheese
  • 1/2 t Salt (optional)
  • 1/4 t Ground Pepper

Directions
  1. Cook Pasta according to package direction; Drain.
  2. Lay Pasta flat on tin foil to cool.
  3. Heat oven to 350 degrees.
  4. In skillet, heat oil.
  5. Add onion; cook, stirring frequently until tender.
  6. Add tomatoes, tomato paste and water.
  7. Heat to just a boil; reduce heat. Simmer 5 minutes; set aside.
  8. In bowl, stir together ricotta cheese, spinach, 1/2 C mozzarella cheese, egg, parmesan cheese, salt and pepper.
  9. In bottom of 12x8-inch baking dish, spread 3/4 C tomato mixture.
  10. Spread about 1/3 C cheese filling on each noodle to within 1-inch of ends; roll up.
  11. Place roll-ups, seam side down in prepared dish.
  12. Top with remaining tomatoes. Cover.
  13. Bake 35 minutes or until hot and bubbly.
  14. Sprinkle with remaining 1/2 C mozzarella cheese; continue baking until cheese melts.

I love doing this, I've also made a version with a white cheese sauce and salmon, lots of herbs.
