Eggless Banana Pancakes Recipe
These turn out well despite not having any eggs in them. Many pancake recipes seem to think an egg (or egg whites) hold them together, and while that's partly true, try these out and see!

Ingredients
  • 1 cup flour
  • 1 t brown sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 dash cinnamon
  • 2/3 cup milk or buttermilk (more if needed)
  • ½ banana (very ripe and mashed)
  • 1 tsp vanilla
  • 1 tsp vinegar

Directions
  1. Mix flour, sugar, baking powder, salt and cinnamon together.
  2. In another bowl, combine all other ingredients.
  3. Add wet ingredients to dry ingredients and stir well.
  4. Add more soy milk if batter is too thick.
  5. Cook on medium-high heat till browned on both sides.
