Pecan Blueberry Muffins Recipe
The crumble makes these tasty muffins stuffed with blueberries and pecans a sweet presentation. Omit the crumble for an easier recipe with lower calories.

Ingredients
  • 1 cup chopped pecans
  • 3 c. unbleached flour
  • 1 c. whole wheat flour
  • 2 c. sugar
  • 2 T baking powder
  • 1/2 tsp salt
  • 3-4 eggs (or 6 egg whites)
  • 1 c. skim milk
  • 1 tsp lemon juice
  • 1 c. heavy cream
  • 1 c. oil
  • 14 oz blueberries
  • Crumble:
  • 1/4 c. whole wheat flour
  • 1/4 c. brown sugar
  • 1/4 c. white sugar
  • 1/4 c. butter
  • 3/4 c. chopped pecans

Directions
  1. Stir together flours, sugar, baking powder and salt.
  2. Add eggs, milk, cream, lemon juice, and oil, stirring gently until moist.
  3. Fold in berries and pecans and spoon batter into muffin cups.
  4. Sprinkle crumble on top of muffins.
  5. Bake for 20 minutes at 375 degrees F, until golden.
  6. Crumble:
  7. Combine flour, sugars and butter.
  8. Cut in butter until mixture is the size of peas.
  9. Stir in pecans. Sprinkle crumble on top of muffins.
