Rocky Road Peanut Butter Popcorn Bars Recipe
Love things made with popcorn, this is a great snack food while watching tv or really anytime. Enjoy! Again says it will make 36, that depends on the size you cut them, I prefer mine a bit larger so I don't get that many.

Ingredients
  • 3 quarts popped popcorn
  • 1/2 cup raisins
  • 1 cup light corn syrup
  • 1 tablespoon butter or margarine
  • 1/2 cup peanut butter chips
  • 1/3 cup chunky or creamy peanut butter
  • 3/4 cup miniature marshmallows
  • 1/2 cup peanuts
  • 1/2 cup semisweet chocolate pieces
  • 1 teaspoon vegetable shortening

Directions
  1. Place popped popcorn and raisins in large bowl.
  2. In saucepan, heat corn syrup and butter to a boil. Boil 3 minutes.
  3. Remove from heat. Stir in peanut butter chips and peanut butter until
  4. smooth.
  5. Pour mixture over popcorn. Toss gently to coat all pieces.
  6. Press into buttered 9-inch square baking pan. Sprinkle marshmallows and peanuts over top. Press lightly into popcorn mixture.
  7. Melt chocolate pieces and shortening over very low heat. Drizzle over top.
  8. Cool several hours before serving.
  9. Cut into 2 1/4 x 1-inch bars.
  10. Makes 36 bars.
