This is barbaric, but u will have to split live lobsters to prepare this dish. If you can get over it, the fastest and easiest way is to plunge a knife into the head between the eyes. Enjoy!

Ingredients
  • 4 1 1/2 to 2 lb. Lobsters
  • Salt and freshly ground white pepper
  • 1 stick sweet butter, melted
  • 3 Tbsp Olive oil
  • 2 tsp lemon juice
  • 1 tsp finely chopped fresh oregano
  • 1 Tbsp finely minced parsley
  • 2 shallots finely chopped
  • 1 garlic clove, minced
  • 1 tsp dijon mustard
  • Few drops Worcestershire sauce
  • The Sauce:
  • 1 1/2 c Hollandaise
  • Lobster Coral (Roe)
  • 1 Tbsp finely chopped parsley
  • 1 Tbsp finely chopped tarragon
  • 2 tsps finely chopped fresh thyme
  • Salt and freshly ground white pepper

Directions
  1. Preparation:
  2. Preheat the broiler.
  3. Slit open both lobsters lengthwise.
  4. Remove the claws, discard the stomach sack and reserve the coral
  5. (roe).
  6. Place Lobsters cut side up in a large baking dish; sprinkle with salt and pepper.
  7. In a small saucepan heat the butter and oil. Add the lemon juice, oregano, parsley, shallots, garlic, Dijon mustard, and Worcestershire sauce.
  8. Spoon the mixture over the lobsters and broil them for 15 min. basting them several times with the butter mixture.
  9. The sauce:
  10. In a bowl, combine the hollandaise and coral with the chopped herbs. Add a pinch of salt and pepper. Spoon a little of the sauce on each lobster. Return them to the broiler and broil until their tops are lightly browned. Serve immediately.

Ohh gawd!! I couldn't do it. I'm sorry. I like lobster, and this looks so good, but I swear to the gods, if I had to kill an animal to eat, I'd be a vegetarian.

True, that. Another sick idea, One of my pals believes in getting them drunk first:
Pour some wine into a pot of water...not sure how much u need really, maybe a glass full. But place lobsters in there with it. When they slow down, they are drunk.


Couldn't one pull the lobster out of the boiling water as soon as it dies(Traditional method, also barbaric)and split it, then pour the fab flavorful sauce on top and next under the broiler?
