This mousse is so so rich that you would only need a couple of teaspoons to fill you right up !!

I made the follow alterations to this recipe with very good results.
1. I increased the butter from 30g to 40g.
2. When melting the chocolate (I used a mixture of 60% and 70% cocoa chocolate) I added about 60ml Bailey's Irish Cream and 5ml vanilla extract. Be sure not to add less than 60ml of liquid to the chocolate when melting or the chocolate will seize.
3. When beating the egg whites, I added a large pinch of cream of tartar and a little over 30 ml super-fine (not powdered) sugar.
4. I fold the chocolate into the egg whites first, then the cream (whipped only until it leaves soft traces).
