Chicken Adobo

- 4 pounds of chicken-your favorite pieces shopping list
- 1 cup white vinegar shopping list
- 1 cup low sodium soy sauce shopping list
- 2 bay leaves shopping list
- 1 cup water shopping list
- 5 cloves of garlic, crushed shopping list
- 1 tablespoon black pepper or 1/2 tablespoon peppercorns shopping list
- 1 medium onion, sliced shopping list
- about 3 tablespoons of vegetable oil shopping list
- If you dont have "low sodium" soy sauce, use regular soy but add 1 and 1/2 cups water to lower the sodium shopping list
How to make it
- In a large pot, add vinegar, water, soy sauce, onion, pepper, garlic, bay leaves and chicken pieces.
- Bring to a boil and simmer, covered for about 1 hour.
- Using Tongs, remove Chicken from pot and set aside.
- Boil liquid for about 10 minutes, till reduced to about 1 cup.
- Add oil to a frying pan and heat till hot. Add Chicken pieces and brown on both sides.
- Remove chicken and put in a serving dish.
- Pour reduced liquid over chicken and serve with white rice.
