Chicken Adobo Recipe
This dish is Filipno in origin. Not as good as the authentic but pretty close. Great with rice !! Hope you enjoy.

Ingredients
  • 4 pounds of chicken-your favorite pieces
  • 1 cup white vinegar
  • 1 cup low sodium soy sauce
  • 2 bay leaves
  • 1 cup water
  • 5 cloves of garlic, crushed
  • 1 tablespoon black pepper or 1/2 tablespoon peppercorns
  • 1 medium onion, sliced
  • about 3 tablespoons of vegetable oil
  • If you dont have "low sodium" soy sauce, use regular soy but add 1 and 1/2 cups water to lower the sodium

Directions
  1. In a large pot, add vinegar, water, soy sauce, onion, pepper, garlic, bay leaves and chicken pieces.
  2. Bring to a boil and simmer, covered for about 1 hour.
  3. Using Tongs, remove Chicken from pot and set aside.
  4. Boil liquid for about 10 minutes, till reduced to about 1 cup.
  5. Add oil to a frying pan and heat till hot. Add Chicken pieces and brown on both sides.
  6. Remove chicken and put in a serving dish.
  7. Pour reduced liquid over chicken and serve with white rice.
