My wonderful take on the alfredo sauce. great as a side but can hold up on it's own. It was real easy and simple to make and tastes better than you can buy

Ingredients
  • pound fettuccine
  • water for pasta
  • 4 cloves garlic
  • 2 sticks unsalted butter
  • 3/4 pint cream or half and half
  • 2 cups or more grated parm reg cheese
  • 1 tsp salt
  • 2 tsp pepper
  • 1 tsp oregano
  • pinch of sugar

Directions
  1. cook fettuccine in boiling salted water until not yet al dente (6-7 mins)
  2. at the same time in a bigger saute pan melt butter on med low heat
  3. slowly sauté diced garlic in butter
  4. add cream, turn heat to low
  5. add seasonings
  6. slowly wisk in cheese. If you add to much to quick or if it is too hot it will clump up on you.
  7. once everything is incorporated add the drained pasta and toss.
  8. serve and enjoy!

If you drop the oregano, you have the original recipe and would make Alfredo di Lelio proud. This is one of those dishes that is so simple yet not usually served at parties. Probably because it does tend to "tighten" as it sits. Thanks, it's delicious.


I honestly did not use the sugar in the Alfredo. This sauce does not need any more binders.
