Leftover Pot Pie

- 3 stalks celery, chopped shopping list
- 1 onion, chopped shopping list
- 2 cooked boneless, skiness chicken breasts, chopped shopping list
- 3 box packages frozen veggies (I used the Immune Health w/ broccoli, carrots, and bell peppers) - thawed shopping list
- 1 1/2 cups low sodium chicken broth shopping list
- 1 1/2 cups white wine shopping list
- season w/ spices you like...I used basil and garlic powder shopping list
- 1 (12 oz) can skim evaporated milk shopping list
- 3 Tbsp. of cornstarch shopping list
- 1/2 cup cheese (I used an Italian mix) shopping list
- 1 cup Bisquick type baking mix shopping list
- 3/4 cup skim milk shopping list
- 1 egg shopping list
How to make it
- Heat oven to 400 degrees.
- In pot on med heat, cook celery and onion.
- Add chicken, thawed veggies, broth, wine, and seasonings and heat.
- Whisk together evaporated milk and cornstarch and add to pot. You might have to add more cornstarch...I never measure!
- Stir in cheese.
- Pour into baking dish.
- Mix together last 3 ingredients and pour on top.
- Bake for 25 minutes or until top is done.
