Leftover Pot Pie Recipe
Made from leftover chicken and stuff from the pantry and freezer.

Ingredients
  • 3 stalks celery, chopped
  • 1 onion, chopped
  • 2 cooked boneless, skiness chicken breasts, chopped
  • 3 box packages frozen veggies (I used the Immune Health w/ broccoli, carrots, and bell peppers) - thawed
  • 1 1/2 cups low sodium chicken broth
  • 1 1/2 cups white wine
  • season w/ spices you like...I used basil and garlic powder
  • 1 (12 oz) can skim evaporated milk
  • 3 Tbsp. of cornstarch
  • 1/2 cup cheese (I used an Italian mix)
  • 1 cup bisquick type baking mix
  • 3/4 cup skim milk
  • 1 egg

Directions
  1. Heat oven to 400 degrees.
  2. In pot on med heat, cook celery and onion.
  3. Add chicken, thawed veggies, broth, wine, and seasonings and heat.
  4. Whisk together evaporated milk and cornstarch and add to pot. You might have to add more cornstarch...I never measure!
  5. Stir in cheese.
  6. Pour into baking dish.
  7. Mix together last 3 ingredients and pour on top.
  8. Bake for 25 minutes or until top is done.
  9. (I forgot to take a picture again!)
